Pulao Rice

Pulao Rice
200g basmati rice
2 small onions (sliced thinly)
½ tsp turmeric powder
3-4 cloves
1” stick cinnamon
6 Green cardamons
2 green chillies, whole
oil for frying
1 stock cube (Chicken or vegetable)
500ml water
Salt to taste

  1. Put the rice in a large bowl
  2. Cover generously with cold water
  3. Leave to soak for at least an hour – a good soak ensures separate grains rather than a solid ‘lump’ of rice
  4. Heat oil in a broad pan
  5. Fry the sliced onions slowly till golden brown.
  6. Add the cloves, cinnamon, cardamoms, green chillies, stock cube and turmeric powder.
  7. Add the rice and fry for 2-3 minutes.
  8. Add the water
  9. Cook on a low heat till rice is done.
