Eton Mess

600g/1 pt double cream
1 pack Meringue nests or a Pavlova base
250g/½ lb Red berry fruits (raspberries, strawberries ,pomegranate seeds, etc.)

  1. Pour the cream into a large bowl
  2. Whip the cream till it holds its shape but is not stiff
  3. Crumble the meringue into the cream in large chunks
  4. Cut the fruit into small pieces (if necessary)
  5. Add to the cream mixture
  6. Gently (so as not to break up the meringue) mix it all together into a . . . . . mess
  7. Fold out into a glass bowl
  8. Top with more fruit
  9. Serve with a flourish!
