600g/1 pt double cream
1 pack Meringue nests or a Pavlova base
250g/½ lb Red berry fruits (raspberries, strawberries ,pomegranate seeds, etc.)
- Pour the cream into a large bowl
- Whip the cream till it holds its shape but is not stiff
- Crumble the meringue into the cream in large chunks
- Cut the fruit into small pieces (if necessary)
- Add to the cream mixture
- Gently (so as not to break up the meringue) mix it all together into a . . . . . mess
- Fold out into a glass bowl
- Top with more fruit
- Serve with a flourish!
