2 rashers streaky bacon or bacon lardons
Olive oil
1 onion, finely chopped
2 cloves garlic, crushed
400g can pinto beans, drained and rinsed
Stock
- Heat oil in a frying pan
- Fry the bacon or lardons until crisp
- In the same pan sauté the onion until softened
- Add the garlic and fry for 1 more minute
- Add the beans with the liquid from the can, stirring well and crushing the beans with a wooden spoon
- Add a little stock powder to enrich the flavour
- Season and serve toped with the crumbled bacon or lardons on top.
