Refried Beans

Mex Refried Beans

2 rashers streaky bacon or bacon lardons
Olive oil
1 onion, finely chopped
2 cloves garlic, crushed
400g can pinto beans, drained and rinsed

  1. Heat oil in a frying pan
  2. Fry the bacon or lardons until crisp
  3. In the same pan sauté the onion until softened
  4. Add the garlic and fry for 1 more minute
  5. Add the beans with the liquid from the can, stirring well and crushing the beans with a wooden spoon
  6. Add a little stock powder to enrich the flavour
  7. Season and serve toped with the crumbled bacon or lardons on top.
