Potato Salad

2 lb. old or baby, new potatoes
few chives, chopped
2 tbsp. mayonnaise
½  tbsp. white wine vinegar
1 tbsp. crème fraîche
black pepper

  1. If using old potatoes, peel and cut into small cubes.  If using new potatoes wash thoroughly and leave whole.
  2. Boil until pierced easily with a knife.
  3. Drain and pour into bowl.
  4. Add mayonnaise and chives and mix with potatoes
  5. Add vinegar and mix.
  6. Mix in creme fraîche.
  7. Sauce should now be quite thick with little pieces of potato from constant mixing.
