2 lb. old or baby, new potatoes
few chives, chopped
2 tbsp. mayonnaise
½ tbsp. white wine vinegar
1 tbsp. crème fraîche
- If using old potatoes, peel and cut into small cubes. If using new potatoes wash thoroughly and leave whole.
- Boil until pierced easily with a knife.
- Drain and pour into bowl.
- Add mayonnaise and chives and mix with potatoes
- Add vinegar and mix.
- Mix in creme fraîche.
- Sauce should now be quite thick with little pieces of potato from constant mixing.
