10 Chicken thighs deboned
6 cloves garlic, crushed
1 tsp salt
2 tsp cinnamon
2 tsp allspice
Pinch cayenne
Juice of 1 lemon
2 tbsp Olive oil
Black pepper
- In a large bowl, mix together all the marinade ingredients
- Add the chicken thighs
- Mix well to coat the chicken thighs completely
- Put in the fridge overnight to marinade
- When ready, fold each thigh in turn with the smooth side out and pierce sideways with a pair of skewers, leaving a gap of 1-2” between the skewers, packing the thighs down tight on the skewers.
- Drizzle the skewered chicken with olive oil
- Season well with salt
- Sear the chicken on a griddle, turning after a few minutes
- Put in the oven pre-heated to 150°C for about 40-50 minutes
- To serve, stand the skewers on a board holding them at the top and slice downwards across the thighs
- Serve in a pitta with onion salad and tzadziki
