Chicken Shawarma

Chicken Shawarma
10 Chicken thighs deboned
6 cloves garlic, crushed
1 tsp salt
2 tsp cinnamon
2 tsp allspice
Pinch cayenne
Juice of 1 lemon
2 tbsp Olive oil
Black pepper

  1. In a large bowl, mix together all the marinade ingredients
  2. Add the chicken thighs
  3. Mix well to coat the chicken thighs completely
  4. Put in the fridge overnight to marinade
  5. When ready, fold each thigh in turn with the smooth side out and pierce sideways with a pair of skewers, leaving a gap of 1-2” between the skewers, packing the thighs down tight on the skewers.
  6. Drizzle the skewered chicken with olive oil
  7. Season well with salt
  8. Sear the chicken on a griddle, turning after a few minutes
  9. Put in the oven pre-heated to 150°C for about 40-50 minutes
  10. To serve, stand the skewers on a board holding them at the top and slice downwards across the thighs
  11. Serve in a pitta with onion salad and tzadziki
