Bolognese Sauce

Bolognese Sauce

2 tbsp. extra virgin olive oil
1 onion, finely chopped
1 clove garlic, minced
120gm/4oz beef mince
120gm/4oz pork mince
2 x 400g cans chopped tomatoes
Salt and freshly-ground black pepper

  1.  Heat the oil in a heavy pan over high heat
  2. When hot, add the chopped onions and garlic
  3. When they start to sizzle, reduce the heat to medium
  4. Leave to soften gently – about 20 minutes
  5. When soft and translucent, add the mince, breaking it up thoroughly.
  6. Turn up the heat again to brown the mince, stirring constantly
  7. When browned, mix in the tomatoes
  8. Season to taste with salt and pepper
  9. When bubbling, cover, reduce the heat to low and leave to simmer for 3 hours, stirring occasionally.
  10. When ready, it can be used in, for example, a lasagna or served with pasta (but NOT spaghetti, please)
