2 tbsp. extra virgin olive oil
1 onion, finely chopped
1 clove garlic, minced
120gm/4oz beef mince
120gm/4oz pork mince
2 x 400g cans chopped tomatoes
Salt and freshly-ground black pepper
- Heat the oil in a heavy pan over high heat
- When hot, add the chopped onions and garlic
- When they start to sizzle, reduce the heat to medium
- Leave to soften gently – about 20 minutes
- When soft and translucent, add the mince, breaking it up thoroughly.
- Turn up the heat again to brown the mince, stirring constantly
- When browned, mix in the tomatoes
- Season to taste with salt and pepper
- When bubbling, cover, reduce the heat to low and leave to simmer for 3 hours, stirring occasionally.
- When ready, it can be used in, for example, a lasagna or served with pasta (but NOT spaghetti, please)
