½kg/1lb potatoes
2 tbsp. olive oil
½ lb chorizo, sliced
black pepper
- Peel and thinly slice the potatoes
- Boil for 5-10 minutes until just cooked
- Heat the oil in a heavy-based frying pan
- Add the chorizo
- Fry until the oil turns red from the chorizo
- Add the cooked, sliced potatoes
- Fry over medium-high heat for about 10 minutes until the potatoes tae on the chorizo colour.
- Serve hot
