Spanish Sprouts


2lb sprouts (fresh or frozen)
¼ lb chorizo
1 small onion, finely chopped
2 tbsp olive oil

  1. Top and tail the sprouts (if fresh)
  2. Cut them in half through the root (large ones in quarters)
  3. Par-boil for 3 minutes
  4. Drain immediately
  5. Cut the chorizo into tiny chunks
  6. Heat the oil in a large frying pan
  7. Fry the onion slowly to soften
  8. Add the chorizo
  9. Raise the heat to high
  10. When the chorizo turns the oil red, add the sprouts
  11. Cook stirring constantly for 5 minutes till all sprouts are glistening
