2lb sprouts (fresh or frozen)
¼ lb chorizo
1 small onion, finely chopped
2 tbsp olive oil
- Top and tail the sprouts (if fresh)
- Cut them in half through the root (large ones in quarters)
- Par-boil for 3 minutes
- Drain immediately
- Cut the chorizo into tiny chunks
- Heat the oil in a large frying pan
- Fry the onion slowly to soften
- Add the chorizo
- Raise the heat to high
- When the chorizo turns the oil red, add the sprouts
- Cook stirring constantly for 5 minutes till all sprouts are glistening
