Kachumber
This is a light salad often served as an accompaniment with main dishes or poppadoms  It can be any combination of fresh chopped tomatoes, cucumbers, onions, and even chili pepper.  I quite like it with lots of red onion which softens seductively in the marinade, cucumber and sometimes, tomatoes.  It may be diced or as here, sliced.

1 red onion, sliced very thinly
Equivalent amount of cucumber, deseeded and sliced thinly
1 large tomato, deseeded and sliced thinly
1 tbsp. olive oil
juice of 1 lemon
Salt and pepper

  1. Slice everything as thinly as possible
  2. Put in a bowl
  3. Mix in the olive oil and lemon juice
  4. Leave to marinate for a few hours, stirring occasionally
  5. Season with salt and peppers and some chilli flakes if desired
