Kachumber
This is a light salad often served as an accompaniment with main dishes or poppadoms It can be any combination of fresh chopped tomatoes, cucumbers, onions, and even chili pepper. I quite like it with lots of red onion which softens seductively in the marinade, cucumber and sometimes, tomatoes. It may be diced or as here, sliced.
1 red onion, sliced very thinly
Equivalent amount of cucumber, deseeded and sliced thinly
1 large tomato, deseeded and sliced thinly
1 tbsp. olive oil
juice of 1 lemon
Salt and pepper
- Slice everything as thinly as possible
- Put in a bowl
- Mix in the olive oil and lemon juice
- Leave to marinate for a few hours, stirring occasionally
- Season with salt and peppers and some chilli flakes if desired
