Chorizo-stuffed Mushrooms

Chorizo-stuffed mushrooms
12 Medium mushrooms
1 thin chorizo
Grated Manchego or Parmesan cheese
Virgin olive oil

  1. Peel and de-stalk the mushrooms
  2.  Slice the chorizo sausage and place one slice inside each mushroom cap.
  3.  Grate cheese and sprinkle generously over the top.
  4.  Drizzle with olive oil
  5.  Bake in medium oven for 20 minutes.
  6.  Serve immediately
