12 Medium mushrooms
1 thin chorizo
Grated Manchego or Parmesan cheese
Virgin olive oil
- Peel and de-stalk the mushrooms
- Slice the chorizo sausage and place one slice inside each mushroom cap.
- Grate cheese and sprinkle generously over the top.
- Drizzle with olive oil
- Bake in medium oven for 20 minutes.
- Serve immediately
