Salsa Ranchera

Mex Salsa

14oz tin chopped tomatoes
1 medium onion finely diced
1 large red pepper finely diced
1 tbsp. vegetable oil
½ tbsp. tomato puree or paste
½ tbsp. red wine vinegar
1-2 green chillies, chopped
¼ tsp. salt
¼ tsp. sugar
¼ tsp. oregano

Fry the onions, peppers and chillies in hot oil until soft.

Stir in the rest of the ingredients.  Simmer gently for 15 minutes.

Serve hot or cold as appropriate.
